Sausage Casserole

A wonderfully rich sausage casserole to warm your belly. It's great served with creamy mashed potatoes and seasonal vegetables

Sausage Casserole


  • 8 cumberland sausages
  • 1 tsp rapeseed oil
  • 1 chopped onion
  • 3 chopped medium carrots
  • 1 chopped leek
  • 2 cloves crushed garlic
  • 1 tbs plain flour
  • 200 ml red wine
  • 1 tsp tomato paste
  • 2 tbs Wonky Tangy Onion Relish
  • 1 tsp mixed herbs
  • 1 bay leaf
  • 250ml vegetable stock


Heat the oil in the pan and brown the sausages over a medium heat for 5 minutes.

Remove to a casserole dish

Add the onion and cook for 5 minutes until softened before adding the carrot, garlic and leeks, then cook for a further 10 minutes. Add the flour and stir through the vegetables before adding the wine and stirring in Wonky onion relish along with the herbs, bay leaf, seasoning and stock.

Bring to the boil before reducing the heat and simmering for 45 minutes.
